Hogfish is the Keys' worst-kept local secret. Outside South Florida most people have never heard of it; down here it is what the cooks order for themselves. The appeal is texture and flavor at once — sweeter than grouper, with a richness closer to scallops and a bigger, looser flake than mahi mahi.
